Book Review: Rick & Bubba's Big Honkin' Book of Grub


I recently received this book through the Thomas Nelson book program, BookSneeze, to read and provide my honest review of the book. I was not required to provide a "good review", simply an honest one. I did not receive any other compensation other than receiving a free copy of this book.
When I was advised I would be receiving this book, I was thrilled! As most everyone knows who follows my blog or knows me at all, I am always looking for new recipes to try out so I couldn't wait to receive this book. While most everyone is always looking for "healthy recipes" these days, I simply look for scrumptious, easy cooking. By the title of this book, that is what I figured I would get!
Well.....out of 214 pages, there are only about 23 recipes in this entire "cookbook". So......not really a cookbook after all. I would consider this book more of a humorous look on eating and why Americans LOVE to eat! You will learn such things as "Diet starts with D-I-E for a reason", you will learn weight-loss tips such as "Jog, instead of walking, to your refrigrator" or "Never put both feet on the scale". The "Two Sexiest Fat Mean Alive" will also provide you with a listing of their all-time favorite places to eat - which also includes the best place on this side of the pearly gates - the ultimate "Church Potlock"!
If you are looking for a humorous book for a foodie in your life, or perhaps someone that has always dieted and just really wants to "Live" their life around the food they adore, then this is the book for them. On the other hand, if you are looking for a real cookbook, you may want to skip right over this one.

TNT Tuesday - Crockpot Lasagna




OK, I know it is only Monday. However, since I been posting "TNT Tuesday" on Wednesday's or not at all, figured I'd at least be early this week! :o)

This is a crockpot recipe that my family enjoyed the first time I made it. I do not make this too often because it is not one of those recipes you can throw in the pot at 7 in the morning and cook for the 9-10 hours that I am away at work. This one only cooks for 6 hours......but it is good to fix on a weekend when I am around the house but don't feel like standing over the stove cooking for hours to have dinner on the table. I can throw this in at noon and be ready to eat at 6:00. I believe I found this recipe in a "Mr. Food" Cookbook.
Crockpot Lasagna
1 lb. ground meat
1 tsp. Italian Seasoning
1 jar (28 oz.) Spaghetti Sauce
1/3 cup water
8 lasagna noodles (uncooked)
15 oz. ricotta cheese
2 cup mozarella cheese (or more if you prefer!)
* Brown ground meat with Italian Seasoning, drain.
* Combine Spaghetti Sauce and water in a bowl and stir until mixed.
* Put 4 noodles in bottom of greased crockpot (you may have to break them to make them fit to cover bottom of crock.)
* Layer 1/2 of the meat on top of the noodles, then 1/2 of the sauce.
* Spread ricotta cheese over sauce, and then sprinkle with 1 cup mozarella.
* Then repeat with remaining noodles, then meat, sauce and mozarella cheese.
Cook on high for 1 hour and then switch to low and continue to cook for 5 hours.

Book Review: Hand of Fate by Lis Wiehl


Do you love crime dramas? If so, you may want to check out this recently released book from the New York Times Best-Selling Author, Lis Wiehl. This is actually the second book in the "Triple Threat" Series. Do not worry if you have not read the first book. I did not, and I was still able to follow along just fine.
This book tells the story of how outspoken radio personality, Jim Fate, was killed by a poisonous gas of some sort while he was on the air recording his show "Hand of Fate". In order to help solve the mystery of who, on a long list of suspects, would have killed Jim Fate, the "Triple Threat Club" steps in. The trio includes a federal prosecutor, an FBI agent and a hard-working journalist. Follow along as they try to figure out the mystery of this murder, deal with the widespread panic and havoc this murder has caused throughout the City, all while each of them also deal with their personal issues and secrets.
This was a very easy and fast-paced read for me with a surprise twist ending. I finished it in two days just wanting to know how each of the "club members" manage in their lives from day to day. I will be going to the book store to purchase the first in the series for sure!

TNT Tuesday - Cheeseburgers

Yes, I know it is Wednesday, but figured "TNT Tuesday on Wednesday" was better than not at all!

This is the recipe that my husband LOVES to use when grilling burgers for the family. The recipe as posted makes four (4) 1/4-pound burger patties (pre-cooked). We obviously double the recipe when making them because we are simply little piggies! :)

Cheeseburgers

1 lb. ground chuck or ground beef
1 tbs. Worcestershire Sauce
1 egg
1/4 c. breadcrumbs
Garlic Clove, crushed
2 oz. shredded cheddar (we use more cheese!)
4 Hamburger Buns
Toppings of your choice

* Mix all ingredients together well.
* Shape into 4 patties
* Grill on the grill to your likeness. - You can also broil these patties or grill them on your George Foreman Grill, which takes about 8-10 minutes for a well done burger.
* Slap that pattie on a bun and decorate to your liking!

TNT Tuesday - Sub Ring

Wow! I know I have missed posting the "TNT Tuesday" Recipe for several weeks and I do apologize. I tend to bite off more than I can chew and just can't seem to juggle everything!

Anyhoo - this is a very simple recipe, but one my teenage daughter requests a lot. Everyone is amazed at how great the bread taste and they think I have slaved in the kitchen all day making homemade bread! Ha!! - I actually took this to a birthday party last month and everyone kept saying where did this bread come from. I simply said "I made it!" My philosophy on "homemade" is - if it didn't come in your house looking like it is when you serve it, and you actually had to prepare it in your home - - then it is homemade! :o)

This recipe originally came from The Pampered Chef years ago when I was a consultant.....

Sub Sandwich Ring

Ingredients:

2 Pillsbury French Loaf (canned bread in the dairy section of your local grocery store)
Italian Seasoning Mix (Garlic, Oregano, Basil)
Lunchmeat of your choice (Ham, Turkey, Roast Beef, all the above.....)
Cheese slices of your choice
Veggie toppings of your choice (lettuce, onions, tomato, olives, etc)
Italian Dressing
Condiments of your choice (mayonaise, mustard, etc)

* Preheat oven according to cooking directions on bread label.
* Take the french loaf out of the packaging and place one loaf on your pan in a semi-circle shape. Then place the other french loaf in a semi-circle shape where it makes an "O" shape. Pinch the ends together that meet so it forms one large circle. Make sure and pinch all the way around so it does not separate. (This dough is "stretchy" so feel free to pull on it and make your circle as big as your pan will allow.
* Take a serrated knife and cut about 6 diagnol slits on the top of the bread to allow the bread to expand while cooking. These do not need to be deep at all, just use the tip of the knife.
* Spray the dough with Pam Spray or brush lightly with oil of your choice.
* Sprinkle on the seasonings of your choice.
* Bake in the oven 25-30 minutes.
* While bread is cooking you can cut up your veggie toppings.
* Once bread is done, let cool then cut the bread in half horizontally to remove the "top" of the bread.
* Spread with your condiments of choice (Mayonaise, mustard, etc) layer on your meat, cheese and veggies, sprinkle with Italian Dressing and then replace the top.

* Then you are ready to slice into serving sizes!

(If you do not want to make the "circle", you can easily lay two loaves straight out on your pan and make two sub sandwiches as well... The circle just makes it "fun")
